What happens if you know someone (like through facebook or these boards, for instance) on your tape date? Wouldn't the CC's not put you on the same show as to avoid any kind of possible collusion or whatever? I thought I read something about that somewhere.

Certainly for in-person friendships, I'm pretty sure that's the case--I seem to recall reading about one such instance for Jeopardy!. Now, as for online acquaintances, I'm not entirely sure...

Well then, if you do end up on the 12/25 show, I'd approach your local station about a week or two before your show airs and try to work something out with them to see if they can air it at a slightly later hour (hopefully not around 2:00 AM like some stations do), on another day (such as the Saturday afterwards in place of the rerun, or pushing back the rest of the week so your show airs on 12/26), or on a subchannel. Or, if you live near a town that gets another station that airs Wheel, maybe you can go watch the episode over there at a restaurant or something.
But we'll cross that bridge if we come to it.
