Adding on to Jeopardy!, if you noticed, there is an improved Daily Double animation; not when it’s revealed, but after the contestant makes their wager.
In addition: The Double in Double Jeopardy! is gold, and the Final is red. Interesting choice of colors.

I just watched the Jeopardy! Season 36 premiere on Dailymotion right now, and I absolutely love the new graphics. The animations were slightly changed for the Daily Double after the contestant wager as well as the zooming in of the clues. I also noticed that ALL the clues zoomed in, and there were no close-ups for clues that aren't highest or lowest value (I hope they'll do closeups as the season progresses).
Now, to the game itself. Jason Zuffranieri, a math teacher from my home state of New Mexico, won his seventh game to open the new season. He tried using some of James' strategies by picking clues at the bottom first; but he didn't implement the Forrest Bounce. However, he did a bit more bouncing between categories in Double Jeopardy! but still not to the same extent that James did. He also got the first DD wrong; he got both DD's correct in DJ! but didn't bet aggressively. I hope his streak will keep going a bit longer; but I wouldn't anticipate him becoming the next James since implementing Holzhauer's strategies won't work for everyone.

And regarding the addition of the Triple Toss-Up, I think it was added to help boost viewership on Wheel. Last season, more viewers watched Jeopardy! in big part because of James, but also because so many bonus rounds were lost.

Three days in, and the new Jeopardy! open has been different each day, with 3 different categories/subjects cycling through the intro. I'd assume there will be 5 total, like in season 34.
