The Jeopardy! fandom is discussing Alex Trebek's episode count after Mike Richards identified it as 8,244. Fans on Jboard deduced that this figure comes from the episode number of his last episode (8310), minus the 65-episode discrepancy from Season 1's summer reruns being counted as unique episodes, and minus the one episode hosted by Pat (8,310 - 65 - 1 = 8,244). Mike did not count Super J! or J!GOAT, and the two-part Watson game was counted as two.
Since we don't know much about daytime Wheel, can we deduce an episode count for Pat Sajak? Since it's still ongoing, let's say we count through this Friday, February 26, the last episode of this week and for the month.
According to the Wiki, the first episode before Pat's debut whose episode number is known is #1702, which aired Tuesday, September 22, 1981. Pat's first episode was Monday, December 28. If every weekday between these dates had a new episode scheduled, including a possible breaking news pre-emption on October 6, that should mean Chuck Woolery's last episode was #1769 and Pat's first was #1770.
Pat's last show, thanks partially to GSN acquiring it in 2007, is known to be #3564. If Pat's first daytime show is indeed #1770, this would mean Pat hosted a total of 1,795 daytime episodes.
The nighttime show is much easier. This Friday's episode is #S-7350. Currently, the episode numbers are 43 greater than the actual count due to the production codes getting messed around with last season's taping cancellations. Season 37 only had 167 episodes instead of the standard 195, and the Season 38 premiere was #S-7231. 195 x 36 + 167 = 7,187 + 43 + 1 = 7,231. Friday's episode is actually the 7,307th nighttime episode of Wheel.
Since J! didn't count its primetime specials for Alex's count, we won't count Celebrity Wheel or the Lottery Experience games for Pat (we don't know how many of the latter were done in 2011 anyway, but we do know the 2017 edition had four).

Might as well do it for Vanna, too.
Vanna claims she did a week of episodes during her tryout phase, and her first permanent show is known to be #2016. Unlike Pat, Vanna remained for the rest of the daytime show's run, except for June 16-20, 1986 when Susan filled in while Vanna was grieving after losing her boyfriend John Gibson in a plane crash. Since we know the full daytime run's episode count was 4,215, Vanna was present for most of the latter 2,200 episodes of daytime Wheel.
As mentioned above, the end of this week will mark 7,307 episodes of nighttime Wheel.
I am only counting episodes where Vanna served as letter turner/toucher, so I am not counting the 15 episodes where she filled in for Pat. I am counting Vanna's 5 tryout episodes before her official debut, as well the 2011 "Vanna For a Day" episode since she still served as hostess for at least half the game.

Both were present for #2016-3564 except for the 5 shows that Susan returned for, but adding Vanna's 5 tryout shows cancels that out. 3,564 - 2,016 + 1 = 1,549 daytime episodes.

Just remembered something. According to the Wiki, Alex Trebek filled in for Pat on the daytime show in August 1985 for unknown reasons. It is believed to have been just for one episode, but that's not confirmed. So, knock one off of the Pat and Pat/Vanna count, and you get 9,085 and 8,824, respectively.

I updated this for Season 40. From S-7350 to S-7815 (the S40 finale) is 465 episodes. So add 465 to the count, and it will be 9,550 for Pat, 9,941 for Vanna, 9,289 for Pat and Vanna. Vanna is almost at 10,000!

And now, the final count. Add 195 to the numbers I gave at the end of Season 40. 9,747 for Pat. However, subtract 5 for the Vanna and Pat/Vanna total due to the Teacher's week episodes. 10,131 for Vanna, 9,479 for Pat and Vanna. Vanna has over 10,000 episodes and will have even more since she is staying. If Season 13 had only 194 episodes instead of 195, subtract one from each of these. Now, if you want to add CWOF, Season 1 had 8 episodes, Season 2 had 13 episodes, Season 3 had 14 episodes, and Season 4 had 10. So, 45 CWOF episodes. Add 45 for Pat's total, but only add 44 for Vanna and Pat and Vanna's total since Maggie took over during the Season 3 "Ultimate Host Night" special finale. And, if you want, add the 5 known Lottery Experience games. Also, for Alex's total, if you want, add the two 1983 and 1984 pilots and then you get 8,246. So, this is the totals.
Nighttime only:
For Pat: 8,010 (the show number of Pat's last show the Season 41 finale) minus 43 or 44 if Season 13 had 194 episodes Minus 16 shows hosted by Vanna and Alex 7,950/7,951 shows
For Vanna: 8,010 minus 43 or 44 as well Plus 390 (Vanna is renewed until Season 43 and assuming each season will still have 195 episodes) Minus 31 episodes MarioGS already mentioned. Minus the 5 October 2023 Teacher's Week episodes. 7,930/7,931 shows at the end of Season 41 (I think the Pat and Vanna count is the same here) 8,320/8,321 shows at the end of Season 43 assuming each season will still have 195 episodes

For Pat: As MarioGS said, Pat hosted 1,795 daytime episodes minus the one show hosted by Alex in August 1985. And added the two episodes. 1,796 shows.
For Vanna: As MarioGS said, Vanna co-hosted 2,200 daytime episodes minus 5 where Susan filled in. But then add the 5 tryout episodes back. 2,200 episodes.
Pat and Vanna: As MarioGS said, there are 1,549 daytime episodes minus the one show hosted by Alex in August 1985. 1,548 episodes.
Both nighttime and daytime: I already gave the final count for those.
For Pat: 9,747 episodes.
For Vanna: 10,131 episodes at the end of Season 41. 10,521 episodes at the end of Season 43.

Since Jeopardy celebrated their 9,000th episode last month on show #9065. I heard that they will be celebrating the 8,000th episode on S-8000 even know it's not the 8,000th episode.

^ Yes. #S-8000 is being acknowledged and promoted as the literal 8,000th episode, even though it's not accurate even if you just count nighttime. Pat and Vanna do actually discuss their respective total number of episodes counting daytime in the close of #S-8000, though.
