Part of the reason why I'm wanting to branch out is because I think I'm getting to comfortable with hosting at EC. I think it would benefit me to go into other setting where it's highly unlikely that I know someone.

That would be a cool idea, but you would need to find other people who are willing and available to help you out.
On a side note, do you need a license to publicly do shows like WOF, Jeopardy or Feud?

Yeah, I know I would need to find help that may or may not be an issue.
I don't know if I would need a license to do that. I've already done it several times here at EC. I've also posted my videos on Wheel's FB page and have not gotten any sort of C&D letters.
Not only that but there are countless videos of PYL public showings as well.
