A brief google search brought me to this from the Wheel of Fortune History Wiki. Otherwise, the exact episode isn't exactly known.
"Back To The Future: Part II
---
In the second chapter of the film trilogy (released November 22, 1989), brief clips of Wheel – including a shot of what is clearly a Fictional Character chyron – appear among many others on a group of screens in the Cafe 80's of 2015 (specifically, on the second screen of the middle row and later on a smaller screen near the Wild Gunman arcade cabinet). Although the trilogy revolves around the year of 1985, the clip is clearly from Season 5 or 6 after the nighttime show switched to playing for cash."

chuckewheel30 also asked on the History Wiki's main talk page, and I gave him the only answer I knew -- pretty much what Emil quoted, actually.
As far as I know, the specific episode hasn't been pinpointed. I suspect the film's producers/Merv Griffin Enterprises/King World/whoever was in charge of picking clips for that scene just chose a random episode, anyway.
