Updated for this season. No highs to speak of, but Season 36 joins 33 and 35 among the low points, barely edging them out in terms of total and average winnings as well as top winner.

This is interesting. Wheel provided what appears to be a figure for winnings that were claimed by the winning SPIN ID holders.
So only about 69% of this season's Secret Santa winnings went claimed.
Also, the total winnings of all Secret Santa episodes since it started in 2011 is currently $4,679,081. Apparently, only a little more than half of that has been claimed over the years.

Updated for Season 37.
Although this season's set a new low for Bonus Rounds with only 3 out of 10 won, and no contestants breaking $65K, the total and average winnings were both a bit higher than Seasons 35 and 36. This was likely because of the trips being a lot more expensive than past Secret Santas, to help supplement low cash winnings.

I did my part by winning the bonus round in season 36! And I believe the person I was the Santa for claimed her prizes per the web site. Interesting that Tyler in the above photo taped on my day. He loved his outfit choice, but they made him lose the white tie for his taping.

Unfortunately, things went more downhill this season w/ only 20% of the Bonus Rounds won (both for the damn minimum) and no contestants breaking $60K. It also set a new low of only $453,112 being given out ($45,311 avg. per ep.).
Then again, aside from Day 3 (in which a $10,100 trip to Antigua was given out), none of the Prize Puzzles broke 5-digits.
