Google now lists up to S39 E60 (December 3). These are the only weeks that have theme names up to that point:

Week 8 - November 1-5: Disney Ultimate Princess Celebration holy crap, when I apply to the show, I'm going to ask if I can be on that week. I get it's probably a limited-edition thing Disney is doing this year, but that's one heck of a theme. |

Here's what we know on tape dates so far:
Week 1 (Teacher's Week): Thursday, July 22
Week 2: Friday, July 23
Week 3: Wednesday, August 11
Week 4: Thursday, September 2 (most likely, small chance it was taped the 3rd)
Week 7 (Oct 25-29, no theme): Wednesday, September 29 (confirmed by contestant on r/wheeloffortune)
It is known there were tapings on August 13 also with the dark generic set, so the next two dark set weeks surely would have taped August 12 and 13. We should be able to tell which was the latter based on which week (or AG show) Vanna is wearing the black and yellow floral dress she is wearing in the video of Karen Griffith's retirement party.
It looks like they're doing what they did last season and doing several three-taping weeks from Wed-Fri.

Week 5 is back to the dark generic set, so that week likely taped August 12 or 13.
Week 8, the Disney Princess week, taped either September 1 or 3, as implied by an interview with Pat at the DIS Family Reunion (a Disney event) on September 10, during which the interviewer said, "We just taped a Disney week last week". September 2 was this week, National Parks, so Disney Princess week is probably a bright generic set with Disney murals.

Week 4: Thursday, September 2 (most likely, small chance it was taped the 3rd) Week 4, National Parks, was actually taped Wednesday, 9/1. Someone shared the slate of S-7443 with me. Week 5, again, was taped August 12 or 13 (most likely the 12th; Vanna's hair is more styled than it was during Karen Griffith's retirement party). Week 6, GAC, was likely taped Thursday, 9/2. That was the day the set pic of the colorful logo behind the trees was posted; they were likely swapping out the trees from the National Parks set. |

The Saturday rerun for 10/30 will be from S38's Halloween Week (too bad they had to pick the worst episode of that week, but it makes sense since Pat and Vanna wish as a Happy Halloween at the end). Several ABC affiliates air the reruns on Sunday afternoons or early evenings during this time of year due to college football, and a few others always air it on Sunday, so some cities will get Halloween-themed Wheel on October 31 in some form.
