Not many surprises given all the previews that were released for both shows in the last few weeks. Top quality production for sure; props to Mike and co. for getting them back on the air on-time.
The spinning caps may take some getting used to for now, but actually are a clever choice by the production team. Instead of making modifications to the wheel itself or completely changing its spinning mechanism, these are an inexpensive solution for what is likely a temporary issue. Once it is safe for the contestants to touch shared surfaces again, they will be easily discarded and the show will revert to the normal routine. I will say that the center-stage distancing during Wheel's credit sequence looks a bit awkward. It honestly would look better for them to stand in the contestant area to maintain the six-foot spacing. I don't know, maybe it's just me...
J!'s changes looked great as well in terms of the new graphics and the set modifications. Something I'm surprised nobody here has talked about is the subtle nod to the past at the start of the Double Jeopardy! round coming in from the commercial - the set pieces start out red and fade into the normal lighting pattern just before the categories are revealed. I don't know if it was a conscious choice, but considering Mike's proclivities for retro aesthetics (which are certainly on display in other aspects of this new season, as well as his time as EP for TPIR and GSN's 2012 revival of Pyramid), I wouldn't be surprised if it was.

When I watched the first Jeopardy! episode of S37, I kind of did notice the set pieces being red at the start of DJ! but then changing back into their normal colors just before Alex revealed the categories. That being said, I hope Mike brings back the set changing to red for DJ! and FJ! later this season.
