That did not affect my airings, as WAND ended the Kentucky Derby at 6:30 PM (Central Daylight Time)
Many NBC affiliates were still running commercials at 7:30 ET, so most of them joined programming in progress around 7:32 or 33. Here is a clip of that happening on WCAU in Philadelphia.
Some NBC's did still manage to start its programs from the top, though. I was checking KSDK in St. Louis and saw the opening logo animation, then switched to WPXI Pittsburgh and they were already on the interviews which likely means it was JIP'd on there. Not sure what WAND did because I don't have access to it.
As for other Saturdays...
May 14: USFL on FOX ran past its scheduled 7:00 ET end, by about 10 minutes IIRC, affecting Wheel on WDAF and WXIX unless they swapped it for a less popular syndie again. Due to the tragic events in Buffalo, all programming was pre-empted on WIVB, including CBS's broadcast of the movie Top Gun. KWQC and WPXI both pre-empted Wheel with infomercials. The latter aired Wheel at 4:00 AM ET that morning.
May 21: All NBC's were pre-empted due to Preakness Stakes (up to 7:30 ET) and USFL (7:30 onwards). FOX had an MLS game that started at 7:30 ET, IIRC. CBS had PGA until 7:00 ET but it overran until about 7:25, pre-empting most East Coast CBS airings of Wheel. ABC had an NBA game, pre-empting West Coast airings.
May 28: FOX had MLB starting at 7:00 ET, game varying depending on market. WDAF aired Wheel at 3:30 CT today and WVUE aired it at 5:30 right before the game. KDVR, as usual, has Wheel at 8:30 MT half an hour after the game's scheduled end, likely meaning it will not air in its entirety if at all (thier game just finished the top of the 6th at 7:15). On CBS, PGA was once again scheduled until 7:00 ET and overran to about 7:02, slightly cutting off most East Coast airings.
I think My wheel provider (WAND 17) has no more pre-emptions for Season 39 besides the reruns
Also NBC will preempt Wheel the Thursday before the Season 40 premiere due to the NFL kickoff (Which is a Season 39 rerun)

KWQC Davenport also pre-empted last Wednesday’s episode (5/25) for severe weather. According to a local on Twitter, meteorologist Erik Maitland angrily called out people complaining about missing Wheel.
A couple things for Thursday, one of them very major.
First off: President Biden is speaking tonight at 7:30 PM Eastern, regarding the tragically high number of recent mass shootings. At least CBS will be airing this address, and there's no reason to believe the other networks won't.
Wheel likely will not be seen in any markets that air it at 7:30 ET. Also, since this has been announced with several hours' notice, it is likely that some 7:00 ET airings may be replaced with Jeopardy! to avoid having that show pre-empted by the address. Please do not blast me for merely mentioning the possibility this could happen. Neither game show, or any TV show, is more important than the issue at hand.
Second, tonight's the first night of several West Coast ABC pre-emptions with Game 1 of the NBA Finals. This is the first of three new S39 episodes that will be affected by this.
Not researching every affiliate. KABC will air Wheel at 10:00 PM Pacific following postgame and the Game Night edition of Kimmel.
KGO's scheduling is confusing right now. We know they are dedicating 90 minutes to their postgame show(?!), followed by Kimmel at 10 (the slot they normally use for Wheel on sports days). Their website and TV Passport have Wheel listed at 3:00 AM PT on some game days, and on others, have Wheel at 3:30 AM with J! at 3:00; they have J! listed at 10:30 PM some days but have it pre-empted with a newscast on others. KGO's Twitter account announced that at least for tonight, there will be no game shows before 11; Wheel will air at 3:30 AM PT following J! I imagine this will be the case on all game nights at this point.
Wheel is not affected on KOTA in Rapid City since the Mountain Time Zone has the option of airing Kimmel Game Night either at 6:00 MT or after the game; KOTA chose the latter option, as they did last year.
WLS Chicago announced that tonight's episode will air at 3:07 AM Central, in place of Daytime J!
WAND Decatur actually did it on March 15th for an WAND Sports special, pushing it to Daytime J!'s normal time slot at 3 PM, which aired early the next day.
KTVT Dallas simulcasted Wheel on KTXA in its entirety. Since they start Wheel early, the first Toss-Up managed to air on KTVT before the special report.
WCCO Minneapolis announced that Wheel will air at 1:40 AM Central (probably more like 1:37).
FOX's coverage cut in at about 7:32 ET, and signed off at about 7:50, so WDAF's airing probably returned during the Speed-Up. NBC signed off at about 7:55, about Bonus Round time. CBS and ABC went until 8:00.
NBC's coverage was optional. Various people in the Discord and on Twitter reported several NBC stations airing normal programming at 7:30 ET. The only ones we found that stuck with Wheel were WAND in Decatur, IL and KSNW in Wichita, KS.
It turns out CBS's coverage was optional as well. Per Twitter, WXVT in Greenwood, Mississippi aired Wheel, and at least one CBS station in Texas did, too. ABC's apparently was not optional, which affected our out-of-towner contestant, Austin, who watches on KATV in Little Rock.
As for the West Coast, NBA Finals Game 1 overran by three minutes.
I stayed up late to capture KHOU's airing of Thursday's episode. Despite the time being listed as 2:40 CT, it actually started around 2:43, and ended around 3:06. Interestingly, most of the commercial breaks were removed. The only one that remained was the one before the Bonus Round.
Also, KFSM in Fort Smith, Arkansas (CBS) will air Thursday's episode Sunday night at 11:00 PM Central. Most guides have it listed as a second airing of the Saturday rerun.
Due to the U.S. Open Golf Tournament on Friday (after season finale), WAND has replaced Wheel with NBC Nightly News (Subject to change) so some NBC stations will be affected

^ It looks like the US Open runs Thursday 6/16 from 2-5 ET (not affecting Wheel anywhere), 4-7 ET on Friday 6/17, and 12-8 ET on Saturday 6/18.
Doing NBCNN at 7:30 (or 7:00) on Friday is up to the stations. WCNC Charlotte still has Wheel scheduled on Friday. Some stations, like WDIV will also probably do 6:00 newscasts at 7:00 on Friday. Regardless, 7:00 ET airings are in danger of being JIP'd if Friday's round runs long. All East Coast NBC's, and potentially Mountain ones, are affected on Saturday.

WAND (Decatur, IL) Moved NBCNN (NBC Nightly News) to 7:30 ET (Equivalent to 6:30 PM CT) Right after WAND News at 6 (which is usually what airs before Wheel)
Also, WAND News at 4 and 5, as well as Jeopardy! were cut on Friday, with J! having a chance of Pre-emption on Thursday if the game runs over its alloted 4 PM CDT endtime
On Thursday, the Big Three networks are all airing coverage of the Capitol Assault Hearings live from 8-10 PM ET/5-7 PM PT. This will pre-empt the penultimate episode of Season 39 in most of the Mountain Time Zone and two of the three Arizona markets. This also means Wheel is pre-empted three days in a row on KGUN Tucson (Wheel is not affected on KOTA Rapid City on NBA game days).
Generally, Mountain and Pacific pre-emptions result in Wheel airing in primetime slots, but two of the three networks are offering optional repeats of network primetime shows for the Mountain Time Zone to fill the one free hour (two hours for Arizona) in the primetime lineup. CBS is offering Bull (in addition to another rerun that is airing nationally at 10 ET/PT) and NBC is offering Dateline. Stations can still opt to air pre-empted syndies or newscasts in that hour, but more than half are not. ABC is not offering any filler.
The coverage is not airing on FOX, so Wheel is not affected on KDVR Denver. Wheel is also not affected on its only two indie affiliates: KTVK Phoenix and KJZZ Salt Lake City.
Wheel should be not be affected anywhere in the Pacific Time Zone. Although there is the possibility that a station may want to do its 6:00 news at 7:00 or 7:30 PT, I checked a few stations and they all still have Wheel at the normal time following the hearings.
Air times for Mountain Time Zone stations that are moving Wheel to other slots are as follows. Any that are not listed (including the other three Montana CBS's despite the four of them almost-always using the same scheduling) are not airing Thursday's Wheel at all. Of the 16 impacted markets in the Mountain Time Zone, only about 7 of them are airing Wheel at all tonight.
KKTV Colorado Springs, CO (CBS) - 8:00 PM MT KPVI Idaho Falls, ID (NBC) - 8:30 PM MT KTVQ Billings, MT (CBS) - 8:30 PM MT KCWY Casper, WY (NBC) - 8:30 PM MT KOTA Rapid City, SD (ABC) - Likely 9:00 PM MT (9-10 is listed as TBA, very likely WOF/J! since they are not listed elsewhere and ABC has no optional filler) KRQE Albuquerque, NM (CBS) - 1:37 AM MT KGUN Tucson, AZ (ABC) - 9:30 PM PT

Correction: Several West Coast NBC stations are opting to do local news following the hearings. Wheel will air one hour later than usual on the following Pacific Time Zone NBC's:
KNSD San Diego, CA - 8:00 PM PT KNDO Yakima, WA - 8:00 PM PT KSBY Santa Barbara, CA - 8:30 PM PT KHQ Spokane, WA - 8:30 PM PT
KKTV Colorado Springs changed their schedule, and one of their anchors announced on Twitter that they are opting to air the optional Bull rerun at 8 MT instead of Wheel. Wheel will in fact not be airing on the station at all tonight, nor will J!
