This post is somewhat too early, as we still have four months to go in Season 34. But I am wondering to what changes Jeopardy! Season 35 would bring us.
I assume the music package would change. The current one has been in use for almost 10 years; and last year, Wheel overhauled its music package. Perhaps the current one will stay for the first half of the season and then get overhauled at the beginning of 2019 (or the first full week of the new year actually). Or maybe the current one will stay through 2020 until Alex Trebek retires, and then gets overhauled at the beginning of Season 37.
Most likely John Hoke will do the new theme and think music for Jeopardy. He did the music package for Sports Jeopardy.
I also guess that J! will get a new set next season. There has seemed to be a trend of getting a new set during milestone seasons as of recently. Although we first saw the 2009-2013 set in Season 25 when J! taped the ToC at CES, it didn't become permanent until Season 26. The current set as we know debuted at the start of Season 30.
Other changes I would like to see:
- The contestant leading at the end of DJ! gets to pick from three categories for FJ! - Kids Week makes a comeback after a 4 year hiatus - College championship goes back to being taped at a university campus - For one show, all the categories being from SNL Celebrity Jeopardy! in all three rounds.

I doubt Kids Week would ever come back because some parents are too lazy/incompetent to teach their children how to be gracious as winners and losers. Even Alex is fed up with it. I would love to see them do road shows for tournament games, but have it somewhere else other than our nation's capital of Washington, District of Columbia. While I like the idea of choosing from multiple FINAL JEOPARDY! categories, I doubt that would happen. Chances are the only thing they will change is the logo and nothing else, unless they have some sort of special 35th anniversary tournament.

In other words, chances are that we'll still be hearing the 2008 theme and think music next season. Jeopardy! seems to wait longer than 10 years before overhauling the music package. As I said, the current theme music may last at least 11 seasons, despite Wheel overhauled its theme music last year. The original package (main theme using synthesizers and saxophones, original think cue carried over from the Art Fleming era) lasted 13 seasons, though the main theme was remixed with bongos in 1992. In the fall of 1997, Steve Kaplan overhauled the Jeopardy! music package (now both the main theme and think cue are more jazzy-sounding). Initially the think music was only piano, but then it was remixed to include a trumpet; in 2001, the 1997 theme was re-arranged and sped up, but the think music remained the same. Current music package debuts in the fall of 2008, composed by Chris Bell Music & Sound Design. Originally had the "leaky faucet" think music, but about a month into Season 25, the think cue gets changed to the one we know today. Also, the main theme initially didn't use electric guitars until midway through the piece. This version, however, is still heard during the end credits.

I'd say the most likely non-gameplay, non-tournament-related change, besides the usual graphics refresh, is a music update. Usually (though not always), the music rights for television shows are set for a "round" number of years or seasons. The years Merv Griffin was still the executive producer presented an extraordinary circumstance; since Merv wrote the main theme and think music himself, he was most likely able to have the show use them at his direction for a prolonged period for his own financial benefit. If TPTB indeed decide to update the music package, John Hoke is most likely to be in charge of the arrangement as he was tapped by Sony Pictures for SJ! and the most recent Wheel music refresh.
It's less probable that the producers would decide to redesign the set after just five seasons, although it has happened – even in less time – in the past.

John Hoke is most likely to be in charge of the arrangement as he was tapped by Sony Pictures for SJ! and the most recent Wheel music refresh It’s interesting that Sony Pictures Television put Chris Bell Music & Sound Design in charge of the current music package for Jeopardy! rather than putting either Frankie Blue or John Hoke in charge back in 2008; they were both in charge of the Wheel music package at the time (John Hoke only did the electric guitar opening theme in Season 25. Frankie Blue did the rest of the package I think - the speed up cue that replaced the short lived version from Season 24 and got remixed in Season 28, the bonus puzzle solve cue, bonus round win music following the envelope reveal that was introduced a month into Season 27, and the express cue). I would like to see a return of the jazzy sound in the think music if the music package gets refreshed, especially if John Hoke does the arrangement. The current think cue is classical sounding, and I preferred the jazzy sound of the 1997-2008 think music (I wish they could’ve used that think music and the 2001 theme until the end of Season 26 and waited until the beginning of Season 27 to debut the current music package - but oh well). At least the “leaky faucet” think music was short lived. It happened twice as a matter of fact. Not only the CES set lasted just for 4 seasons. The grid set only lasted for 5 seasons but was used the first two months of Season 13 before it got replaced by the sushi bar set.

There won't be any gameplay changes as long as Alex is there at least. February 2019 will be 17 years and 2 months since they updated the dollar values to their current values, and that was how long the 1984-2001 values were in play for, but I don't see them changing those next season either. It was Regis primetime WWTBAM that was the catalyst for the updated dollar values back then. They may be forced at some point to cut each round to five categories instead of six if more commercial time keeps being added to the show, and they could use to do a five category board for celeb weeks to ensure that at least most of the clues will be played.

They could at least bring back long-standing traditions (non-gameplay) that ended either during Season 14 or after Season 24: - swooshing sound at the top of the show - popping in the dollar amounts at the start of DJ! - set changing from blue to red for DJ! and FJ! but changing back to blue at the conclusion of an episode (like during the early days of the sushi bar set) But even I probably don't see those coming back anytime soon.

Should there be a music refresh next season (most likely with John Hoke being in charge), the Rock & Roll Jeopardy! music also ought to be retired and replaced with new theme music for the Teen Tournament and College Championship. The R&R J! music has still been used on those tournaments and Kids Week to this day, even after the current Jeopardy! music package was rolled out.

[Since when did you have any right to boss the mods around?] And on Jeopardy's website, taping begins in July (I think while the last few weeks of Season 34 are airing). I am still not sure as to whether there'll be a music refresh, a new set, or both. But I pretty much have a feeling the former will probably occur, just because Wheel's music package was revamped last year, and the current J! theme music has been in use for almost a decade.

I stumbled across this somewhere and thought this might be used as the official title card for Season 35, but found out it's an alternate Season 34 logo used during promotions. However, I think this should be used as next season's logo (add "35th anniversary" underneath) in my humble opinion.

Those tiles kinda remind me of the 25th Anniversary logo though, so maybe it could be used?

The swooshing sound effect retired the first time around just after the Swiss 911 font debuted in the end credits but returned at the time the Clue Crew was first introduced along with the mustache being completely shaved off which was also when the runner-up prizes became runner-up trips IIRC.

The clue values that are doubled will be reduced from $100 to $500 in the Jeopardy! round and $200 to $1,000 in the Double Jeopardy! round. The Clue Crew will stay during the start of the new season. Harry Friedman will stay as the executive producer of the show.

So far, no word from MarioGS on whether J! will roll out a new music package when the new season premieres in September. So probably the 2008 theme and think music are here to stay, at least the first part of the season.
